Instructions
In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until it becomes translucent.
Add the minced garlic and diced jalapeños to the pot, and cook for an additional 2 minutes, stirring frequently.
Pour in the chicken or vegetable broth, and bring the mixture to a simmer.
Stir in the cream cheese until it melts smoothly into the broth.
Add the shredded cheddar cheese, corn kernels, smoked paprika, and cumin. Stir until the cheese is well incorporated and the soup is heated through.
Season the soup with salt and pepper to taste. If you'd like a spicier soup, feel free to add extra diced jalapeños at this point.
Allow the soup to simmer for 10-15 minutes, stirring occasionally, to let the flavors meld together.
Serve the soup hot, garnished with fresh cilantro and accompanied by tortilla chips for added crunch.
