Instructions
Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy clean-up.
In a large bowl, combine the sausage pieces, broccoli, bell peppers, red onion, and baby potatoes.
Drizzle the olive oil over the mixture, then sprinkle with smoked paprika, garlic powder, dried oregano, salt, and pepper. Toss everything together until well-coated.
Spread the sausage and veggie mixture evenly on the prepared baking sheet, ensuring they are in a single layer for even roasting.
Roast in the preheated oven for 25-30 minutes, or until the sausage is cooked through and the vegetables are tender and slightly caramelized, stirring midway through for even cooking.
Once done, remove from the oven and let it cool for a few minutes. The sausage should be golden and the veggies vibrant.
Garnish with freshly chopped parsley before serving.
