4mediumsweet potatoes, peeled and cut into 1-inch cubes
0.25cuppure maple syrup
2tablespoonsolive oil

Instructions
Preheat your oven to 400°F (200°C).
In a large mixing bowl, combine the sweet potato cubes, olive oil, maple syrup, cinnamon, nutmeg, salt, and pepper. Toss until the sweet potatoes are well coated with the mixture.
Spread the sweet potatoes in an even layer on a baking sheet lined with parchment paper to prevent sticking.
Sprinkle the chopped pecans evenly over the sweet potatoes.
Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the sweet potatoes are tender and caramelized on the edges.
Once done, remove from the oven and let them cool for a few minutes.
Garnish with fresh parsley before serving to add a pop of color.
