In a large skillet over medium heat, cook the ground beef or turkey until browned. Drain excess fat if necessary.
Stir in the taco seasoning according to package instructions along with 1/4 cup of water. Let it simmer for 5 minutes.
Add the rinsed black beans and frozen corn to the meat mixture, stirring well to combine.
In a separate bowl, prepare the Jiffy Cornbread Mix according to package instructions and fold in half of the shredded cheese.
In a greased 9x13-inch baking dish, spread the meat mixture evenly on the bottom. Pour the salsa over the meat mixture. Carefully spread the cornbread batter over the layer of salsa.
Sprinkle the remaining cheddar cheese over the cornbread layer.
Bake in the preheated oven for 20-25 minutes or until the cornbread is golden brown and a toothpick inserted in the center comes out clean.
Remove from the oven and let it cool for a few minutes. Top with sour cream, chopped green onions, and fresh cilantro before serving.
