In a large bowl, combine the cubed sweet potatoes, olive oil, smoked paprika, salt, and pepper. Toss until sweet potatoes are well coated.
Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper. Roast in the oven for 20 minutes.
While the sweet potatoes are roasting, prepare the honey garlic sauce. In a small saucepan over medium heat, combine honey and minced garlic. Stir and cook for about 2-3 minutes until fragrant (do not let the garlic burn). Remove from heat and set aside.
After 20 minutes, remove the sweet potatoes from the oven and stir them. Add the sausages to the baking sheet, placing them among the sweet potatoes. Drizzle the honey garlic sauce over the sausages and sweet potatoes.
Return the baking sheet to the oven and roast for an additional 15-20 minutes, until the sausages are cooked through and the sweet potatoes are tender and caramelized.
Once done, remove from the oven and let rest for a couple of minutes.
Garnish with fresh chopped parsley before serving.
Notes
Make sure not to burn the garlic while preparing the sauce.
