Instructions
Heat olive oil in a large pot over medium heat. Add chopped onion, carrots, and celery. Sauté for 5-7 minutes until the vegetables soften.
Stir in the minced garlic and grated ginger, and cook for an additional minute, until fragrant.
Add the chicken breast (or thighs) to the pot, followed by the chicken broth, turmeric powder, thyme, salt, and pepper. Bring to a boil.
Reduce the heat to low, cover the pot, and let it simmer for about 20 minutes, or until the chicken is cooked through.
Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.
Add the frozen peas and sweet corn, and stir well. Simmer for another 5-10 minutes until the peas and corn are heated through.
Finish by stirring in the lemon juice for brightness and adjusting seasoning with more salt and pepper if needed.
Serve hot, garnished with fresh parsley or cilantro if desired.
