black beans, drained and rinsed

diced tomatoes with green chilies

kale or spinach, chopped

corn kernels (fresh or frozen)

Instructions
In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
Add the minced garlic and sauté for another minute until fragrant.
Stir in the diced carrots, celery, and bell pepper. Cook for about 5-7 minutes, stirring occasionally, until the vegetables are tender.
Add the sliced mushrooms to the pot and cook until they begin to soften, about 3 minutes.
Stir in the black beans, diced tomatoes (with their juices), and vegetable broth.
Sprinkle in the cumin, smoked paprika, dried oregano, salt, and pepper. Bring the mixture to a boil.
Once boiling, reduce the heat to low and simmer for about 20 minutes, allowing flavors to meld together.
In the last 5 minutes of cooking, add the chopped kale (or spinach) and corn, stirring to combine. If desired, add lemon juice for extra flavor.
Taste and adjust seasoning as necessary.
Notes
Serve in large cauldrons or deep bowls for a festive touch.
