ground turkey or beef

onion, chopped

bell pepper
chopped (any color)

garlic, minced

can (15 oz)
black beans, drained and rinsed

can (15 oz)
corn, drained
1
can (14.5 oz)
diced tomatoes, with their juice

packet
taco seasoning

tortilla chips, crushed (plus extra for topping)

shredded cheese (cheddar or Mexican blend)

Instructions
In a skillet over medium heat, brown the ground turkey or beef, breaking it apart with a spatula. Drain any excess fat.
Add chopped onion, bell pepper, and minced garlic to the skillet. Sauté for about 5 minutes, until vegetables are softened.
In the slow cooker, combine the cooked meat mixture, black beans, corn, diced tomatoes, and taco seasoning. Stir well to combine.
Add the crushed tortilla chips into the mixture, folding them in gently to incorporate.
Cook on low for 4-6 hours or high for 2-3 hours.
In the last 30 minutes of cooking, sprinkle the shredded cheese on top and cover to allow it to melt.
Once cooking is complete, season with salt and pepper to taste and give it a gentle stir.
Notes
Serve in bowls, garnished with extra tortilla chips, sour cream, sliced jalapeños, and fresh cilantro for added color and flavor.
