Instructions
In a bowl, mix together the chicken broth, heavy cream, minced garlic, Italian seasoning, salt, and black pepper. This will be your flavorful sauce.
Drizzle olive oil at the bottom of the crockpot to prevent sticking.
Place the baby potatoes in the bottom of the crockpot. Season them lightly with salt and pepper.
Lay the chicken breasts evenly over the potatoes.
Pour the prepared sauce over the chicken and potatoes, making sure everything is covered.
Sprinkle the grated Parmesan cheese generously over the top of the mixture.
Cover the crockpot with the lid and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is fully cooked and tender.
Once cooked, gently stir the contents to mix the melted cheese and sauce together.
Serve hot, garnished with chopped fresh parsley if desired.
