grated Parmesan cheese

olive oil

fresh parsley, chopped (for garnish)
Instructions
Begin by preparing the crockpot. Lightly grease the bottom with olive oil to prevent sticking.
In a large bowl, mix together the minced garlic, chicken broth, salt, pepper, thyme, rosemary, and half of the Parmesan cheese.
Place the halved baby potatoes at the bottom of the crockpot.
Lay the chicken breasts on top of the potatoes and pour the garlic-Parmesan mixture over everything.
Sprinkle the remaining Parmesan cheese evenly on top of the chicken and potatoes.
Cover the crockpot with the lid and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and cooked through.
Once cooked, carefully remove the chicken and potatoes from the crockpot.
Optional: For a crispy top, place the chicken under a broiler for 2-3 minutes.
Serve the chicken and potatoes on a platter, drizzling some of the sauce from the crockpot over the top.
Garnish with fresh chopped parsley for added color and freshness.
Notes
For a crispy top, broil the chicken for a few minutes after cooking.
