In a large mixing bowl, combine the diced apples, flour, granulated sugar, baking powder, cinnamon, nutmeg, and salt. Stir until the apples are well coated with the dry ingredients.
In a separate bowl, whisk together the milk, egg, vanilla extract, and melted butter until smooth.
Pour the wet mixture into the dry mixture and stir until just combined, being careful not to over-mix—small lumps are okay.
Preheat your air fryer to 350°F (175°C).
Spoon tablespoons of the batter into the air fryer basket, spaced slightly apart to allow for expansion during cooking.
Air fry the fritters for 10-12 minutes, flipping halfway through until they are golden brown and crispy.
Once done, remove the fritters and place them on a wire rack to cool slightly.
Dust the warm fritters with powdered sugar before serving.
