Instructions
In a medium saucepan, combine the fresh cranberries, orange juice, orange zest, honey, cinnamon, ginger, and salt.
Cook over medium heat, stirring occasionally, until the cranberries start to pop and release their juices (about 10-15 minutes).
Once the cranberries burst, reduce the heat to low and simmer for an additional 5 minutes until the sauce thickens slightly.
Remove from heat and let the sauce cool to room temperature. It will thicken as it cools.
Once cooled, transfer the cranberry sauce to a serving bowl.
If desired, sprinkle chopped pecans on top for added texture and garnish with fresh mint leaves.
Notes
For a vegan option, substitute honey with maple syrup.
