Form the mixture into 4 equal patties, making a small indentation in the center of each to prevent puffing while cooking.
Heat the olive oil in a large skillet or griddle over medium-high heat.
Once hot, add the burger patties to the skillet. Cook for about 4-5 minutes on one side, until a nice crust forms.
Flip the burgers and immediately place a slice of cheddar cheese on top of each patty. Cook for an additional 4-5 minutes or until the cheese is melted and the patties reach your desired level of doneness.
While the burgers are cooking, mix the mayonnaise and hot sauce in a small bowl to create a spicy aioli.
Toast the hamburger buns on the skillet for about 1-2 minutes until they are slightly golden.
Assemble your burgers by spreading the spicy aioli on the bottom bun, placing the lettuce, the patty with melted cheese, sliced tomatoes, and pickles. Top with the other half of the bun.
