Instructions
In a large pot, heat the olive oil over medium heat.
Add the diced onion, carrot, and celery. Sauté for about 5 minutes, until the vegetables are soft.
Stir in the minced garlic, ground cumin, and smoked paprika. Cook for an additional 2 minutes until fragrant.
Pour in the diced tomatoes (with juices) and vegetable broth. Add the chickpeas and bay leaf. Bring to a simmer.
Reduce the heat to low and let the soup simmer for about 20 minutes, allowing the flavors to meld together.
Remove the bay leaf and stir in the fresh spinach or kale until wilted. Season with salt and pepper to taste.
Serve hot, garnished with fresh basil or parsley and accompanied by crusty bread.
