Preheat your oven to 375°F (190°C) and lightly grease a baking sheet or line it with parchment paper.
In a large mixing bowl, combine the ground beef, mozzarella cheese, Parmesan cheese, minced garlic, onion powder, Italian seasoning, salt, and pepper. Mix until well combined.
Take a piece of biscuit dough and flatten it into a disc. Place approximately 2 tablespoons of the beef and cheese mixture in the center of the disc. Fold the edges of the dough over the filling and pinch to seal tightly. Repeat with all biscuit pieces.
Once all the bombs are formed, place them seam side down on the prepared baking sheet. Brush the tops generously with melted butter.
Bake in the preheated oven for 15-18 minutes, or until the tops are golden brown and the filling is cooked through.
Remove the bombs from the oven and let them cool slightly. Sprinkle with fresh parsley for a pop of color and added freshness. Serve warm.
