In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess grease if necessary.
Add finely chopped onions to the beef and sauté until they become translucent (about 3-4 minutes).
Stir in the shredded cheddar cheese, dill pickles, ketchup, mustard, garlic powder, salt, and pepper. Mix until the cheese is melted and all ingredients are well combined. Remove from heat and let cool slightly.
Lay an egg roll wrapper on a clean surface with one corner facing you. Place 2-3 tablespoons of the cheeseburger mixture near the center of the wrapper.
Fold the bottom corner of the wrapper over the filling, then fold in the sides. Roll tightly towards the top corner, sealing the edge with a little water.
Repeat the process with remaining egg roll wrappers and filling.
In a large pot or deep skillet, heat oil over medium-high heat (about 350°F). Carefully add the egg rolls in batches, frying for about 3-4 minutes on each side or until golden brown and crispy.
Use a slotted spoon to transfer the fried egg rolls to a paper towel-lined plate to drain excess oil.
Serve hot with additional ketchup and mustard for dipping.
